Paul J. LaBue

Executive Chef, The Seafood Shop

 Chef LaBue, one of the most recognized and respected culinary experts in the world famous Hamptons, on Long Island’s East End, is the Executive Chef and Director of Catering of The Seafood Shop, the Hamptons’ iconic seafood mecca in Wainscott, New York.

In 2012, Chef LaBue joined Colin Mather, The Seafood Shop’s owner, transforming and elevating both the freshly cooked take-out offerings and the famous Seafood Shop off-premise catering to world-class standards. For fashion mavens, business leaders, celebrities, or Wall Street moguls, Chef LaBue and The Seafood Shop is the only choice in the Hamptons to cater a spectacular party, special event, or sunset clambake.

At 21, Chef LaBue, graduated with honors from the prestigious Academy of Culinary Arts, soon to become head chef at The Wyckoff Inn in New Jersey, and later, became sous chef & pastry chef at the fabled Nick & Toni’s in East Hampton, NY. Choosing to stay in the Hamptons, Chef LaBue, at 31, opened The Beacon in Sag Harbor, NY, as their Executive Chef. In 2006, Chef LaBue became Chef De Cuisine for the long running and respected, The Laundry, and in 2010, was named Executive Chef/Partner for the highly acclaimed Navy Beach in Montauk, NY.

 

Colin Mather

Owner, The Seafood Shop 

Colin Mather, one of America’s most renowned fishmongers, is the owner of The Seafood Shop, the Hamptons’ iconic seafood mecca in Wainscott, New York.

Mr. Mather, a Hampton’s native, attended Sag Harbor’s Pierson High School, and soon became an apprentice fishmonger and protégé for then founder and original Seafood Shop owner, the late John Haessler. On January 1, 2000, Colin Mather purchased The Seafood Shop, becoming only the second owner of the almost half century-year-old year old venerable fish market, kitchen and caterer. Mr. Mather also gives credit to his father, Jack, who helped instill The Seafood Shop’s motto, “The Freshest Fish, The Finest Choice.”

The Seafood Shop, situated midway between the towns of Southampton and East Hampton, on the famous Montauk Highway, attracts countless A-List clientele, from investment bankers to local fishermen, world renowned chefs to mega home builders, along with the regular cadre of celebrities including Jimmy Fallon, Katy Perry, Richard Gere, Jimmy Buffet, Bobby Flay, Giada De Laurentiis, Ina Garten, Alec Baldwin and Matt Lauer. When not overseeing the Hamptons finest fish shop, kitchen and catering co., Mr. Mather spends time with his partner, Shannon, and their two young boys.

Lizz Cohen

Executive Catering Sales Coordinator

Was Born and raised on the east end of Long Island. She has salt water in her veins and started fishing, crabbing and clamming at the ripe old age of 5. She is an avid boater and loves being outdoors with her two dogs, going on nature walks. Lizz is a graduate of East Hampton High School class of 2007 and her background is in the culinary field having attended Suffolk Community College Culinary Program 2009-2011. She has been with The Seafood Shop Catering since 2013 and is our Executive Catering Sales Coordinator.


 

Ernesto Walter Elenes

Sous Chef

Comes to us via Tampico Mexico. He has been a prep cook at some of the top eateries in the Hamptons for more than 15 years and has acquired a great palate that rivals, any chef he has worked for. He recently joined The Seafood Shop and was quickly moved over to the catering department in 2013. His vast knowledge of Barbecue comes from his 12 years of experience prepping and smoking all the meats for Turtle Crossing. It is due to this experience that are Barbecue gets such praise. He is now the Sous Chef in charge of all catering preparation and helps oversee on all the daily operations.

 

 

 

Eileen McKee

General Manager 

As General Manager Eileen Mckee exemplifies The Seafood Shop Catering Co. passion for hospitality, commitment to quality, and dedication to excellence.

Though her recent previous background has been in insurance sales, Eileen Mckee has been an integral part of our seasonal wait staff for the past three summers. It was her work ethic, focus, and team leadership skills which elevated her to the GM position in 2015. Eileen has transitioned to her current role seamlessly and has successfully impacted and elevated our clients overall event experience with a near perfect 100% satisfaction.

Born and raised on Long Island where her Father was a Bayshore clammer, Eileen Keyser is a native Long Islander through and through. Being the youngest of nine she has always found herself in competition trying to outshine her older siblings, proving still today how tenacious she can be and that there truly is nothing she can’t accomplish. Eileen resides in Springs with her Husband Coach Joe Mckee, their beautiful daughter Coleen and chocolate lab Marley.
